Cheddar Cheese Muffins

Cheddar Cheese Muffins


2 cups all-purpose flour
3 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. baking soda
1 tbsp. fresh ground black pepper
2 eggs
1/4 cup butter, room temperature
1 cup milk
1 tsp. garlic, minced
2 cups Cheddar cheese, shredded

In a large bowl, sift together the flour, sugar, baking powder, soda, and black pepper.  In another bowl, beat-up the eggs, butter, milk, and garlic.  Fold in the cheese.  Add the wet mix to the dry mixture blending well (don’t over mix).  Spray muffin cups and fill each about 2/3 full.  Bake in a preheated oven at 350 degrees for approximately 20 minutes, or until a toothpick inserted in the center comes out clean.  Makes 12.
