Meat Eater’s Scramble


2 Italian sausages, thinly sliced
4 bacon slices, chopped
1 tsp. garlic, minced
1 small red onion, diced
2 small red potatoes, skin on, diced
1/2 cup tomatoes, diced
6 eggs
1/4 cup black olives, sliced
1/2 tsp. oregano
1/2 cup mozzarella cheese, shredded

In a skillet over medium heat, stir the sausage, bacon, garlic, and onion together until the bacon is crisp.  Add the potatoes and cook until gold’n brown.  Add tomatoes and simmer while blending with other ingredients and reducing some of the liquid.  In a bowl, beat-up the eggs.  Blend in the olives and oregano.  Pour into skillet mixing thoroughly.  Stir together until the eggs are set.  Spread cheese over the top.  Cover to melt.  Serve from skillet.  Serves 4 to 6.
